I want to share a recipe that I really enjoy making and my husband enjoys eating. I've made this dish with both pork and chicken, but I'll share the recipe with chicken. This is a delicious high protein meal that does not hurt my stomach. It's a good pre-workout meal.
Skillet Chicken with Scalloped Golden Potatoes
Servings: 3
Ingredients:
8 mini golden potatoes, thinly sliced
1 cup milk (I use lactose free milk)
2 small onions, sliced
2 tbsp garlic, minced
2 tbsp butter
3 boneless, skinless chicken breasts
Salt and pepper, to taste
Italian seasoning (1.5 tbsp)
Instructions:
Prepare the Ingredients:
Thinly slice the mini golden potatoes.
Slice the onions and mince the garlic if not pre-minced.
Season the chicken breasts with salt and pepper.
Sauté the Italian Seasoning:
In a large skillet over medium heat, melt the butter & add the seasoning.
Add the sliced onions and garlic, sautéing until fragrant and softened (about 2-3 minutes).
Cook the Chicken:
Push the onions to the side and add the chicken breasts to the skillet.
Sear the chicken on each side for about 3-4 minutes until golden brown but not fully cooked through.
Simmer with Potatoes:
Add the sliced potatoes to the skillet, spreading them evenly.
Pour in the milk, ensuring the potatoes are mostly covered.
Reduce heat to low, cover, and let simmer for 15-20 minutes, stirring occasionally, until the potatoes are tender and the chicken is fully cooked (internal temperature of 165°F / 75°C).
Final Touches:
Taste and adjust seasoning if needed.
If desired, sprinkle with fresh herbs before serving.
Serve & Enjoy!
